Recap: Co-Op 360 – San Francisco

This past May, Outpost, in collaboration with our friends at Conference Direct, hosted an intimate dinner of friends, and future friends, at Nightbird in San Francisco. The goal of the evening was to foster community among fellow travelers, highlighting how to best maintain your body and spirit, while living a life on the road.

Dr. Lacey Chittle brought her bio-hacking expertise to teach us all how to best navigate the arduous act of travel and flying, so that when we arrive, we’re in a better spot that when we took off. Having studied at the Institute for Functional Medicine, Dr. Kittle used her own health tribulations to reveal their purpose – identifying the clues that our body gives us to show us exactly what we need to live a fuller, healthier life.  

Kim Alter, and her amazing team at Nightbird, gave us a meal to remember. Each course mimicked something you would receive on a flight, but with an incredible twist. Nothing was ignored – pretzels, Biscoff cookies, savory snacks – each showed us what travel could be in a perfect world.

BITES
“A play on warm nuts”
Nut bread/Nut butter/Truffle – made with almonds, pumpkin seeds, chia, flax, & psyllium husk

Soft pretzel, kaluga caviar, house-made creme fraiche, cold pickled Leek blossom, & applewood smoked maple syrup

Lobster Tail

Maine lobster cooked in a pan with butter,  hearts of palm from Panama, raw and cooked, local passionfruit with brown butter and orange juice

Milk bread with House cultured butter in gold leaf packets

Australian Wagyu short rib

12 hour braised Wagyu from Australia, cooked on binchotan from Japan. Fava leaves with confit green garlic, lemon preserves, pickled ramp and olive oil

Cooked in wagyu fat and aromatics

Christopher Willits composed a custom soundtrack for the evening, presented in three distinct phases—takeoff, cruising, and landing. Each piece was designed to evoke a sense of calm and grounding, gently guiding us back to center throughout the experience.
